Description

Garlic Parmesan Crockpot Chicken and Potatoes is a comforting, family-friendly dinner made with tender chicken breasts and baby potatoes slow-cooked in a rich garlic parmesan broth.


Ingredients

For the Chicken:

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 tablespoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

For the Potatoes:

1.5 pounds baby potatoes, halved

1 cup chicken broth

1/2 cup grated parmesan cheese

4 cloves garlic, minced

2 tablespoons olive oil

Fresh parsley for garnish (optional)


Instructions

1. Wash and halve the baby potatoes. Mince the garlic and set aside.

2. Rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes (if using).

3. Layer the halved potatoes in the bottom of the crockpot.

4. Place the seasoned chicken breasts on top of the potatoes.

5. Pour the chicken broth over the chicken and potatoes to coat evenly.

6. Sprinkle the minced garlic evenly over the chicken.

7. Add the grated parmesan cheese on top of the chicken.

8. Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender.

9. Check that the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.

10. Remove the chicken and potatoes carefully and spoon any remaining sauce over the top.

11. Garnish with chopped fresh parsley before serving, if desired.

Notes

This dish goes well with a crisp side salad or steamed vegetables.

For a richer, creamier sauce, stir in a splash of heavy cream or cream cheese during the last hour of cooking.

Leftovers store well in an airtight container in the refrigerator for up to 3 days.

You can substitute boneless chicken thighs for a juicier option.
