Ingredients
- 2 large sweet potatoes, scrubbed and sliced into 1/4 inch thick rounds
- 3 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 1 cup crumbled feta cheese
- 2 tablespoons honey
- 1⁄4 cup chopped fresh parsley
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1⁄4 cup toasted pecans, roughly chopped
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
3. Brush both sides of the sweet potato rounds with olive oil and season with salt and freshly ground black pepper.
4. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are tender and golden brown.
5. While the sweet potatoes are baking, prepare the topping: In a medium bowl, combine the crumbled feta cheese, honey, chopped parsley, lemon juice, lemon zest, and toasted pecans. Mix well to combine.
