Description

Indulge in a warm bowl of Spicy Jalapeño Popper Soup, where creamy richness meets a kick of heat! This delightful soup combines fresh jalapeños, cream cheese, and sharp cheddar for an unforgettable flavor experience. Perfect for chilly evenings or social gatherings, this dish is not only easy to prepare but also offers endless customization options with your favorite toppings.

Ingredients

Scale
  • 4 fresh jalapeños, diced
  • 8 oz cream cheese, softened
  • 4 cups low-sodium chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

1. In a large pot over medium heat, add olive oil. Sauté diced onion for about 5 minutes until translucent.

2. Stir in minced garlic and diced jalapeños; cook for another 2–3 minutes until fragrant.

3. Lower heat and add softened cream cheese; stir until melted and smooth.

4. Gradually pour in chicken broth while stirring continuously until well combined.

5. Season with cumin, smoked paprika, salt, and pepper. Simmer on low heat for about 10 minutes.

6. Stir in shredded cheddar until melted. For a creamier texture, use an immersion blender to blend the soup.

Notes

Top with crispy Beef bits, extra shredded cheese, chopped green onions, or tortilla strips for added flavor and crunch.

For less heat, remove the seeds and membranes from the jalapeños before dicing.

This soup can be made vegetarian by substituting vegetable broth for chicken broth.

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently over low heat to avoid curdling the cheese.
