Description

Slow Cooker Creamy Lemon Herb Chicken is perfectly tender chicken simmered in a garlic rosemary broth and finished with a rich, creamy lemon sauce.


Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tablespoon unsalted butter (can use salted)
  • 1 shallot, diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh chopped rosemary
  • Zest from 1 lemon
  • 1 ½ cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup heavy cream

Instructions

  • If your slow cooker has a sauté function, turn it on. If not, heat a large skillet over medium-high heat.
  • Add butter to the slow cooker/skillet and brown chicken breasts 3–5 minutes per side.
  • Add shallot, garlic, and rosemary. Cook for 1–2 more minutes.
  • If using a skillet, transfer chicken and mixture to the slow cooker.
  • Pour in chicken broth, stir in lemon zest, season with salt and pepper.
  • Cook on high for 3–4 hours or low for 6 hours until chicken is tender.
  • Remove chicken and cover to keep warm.
  • If using skillet, transfer juices from slow cooker to skillet over medium heat.
  • Whisk together cornstarch and 2 tbsp water.
  • Add cream to the juices, then stir in cornstarch slurry.
  • Simmer for about 5 minutes until sauce thickens.
  • Drizzle sauce over chicken and garnish with rosemary if desired.

  • Serving Suggestions: Serve with pasta, rice, cauliflower rice, or roasted vegetables like Parmesan Roasted Potatoes or Garlic Parmesan Green Beans.
  • Storage: Refrigerate leftovers in an airtight container for 3–4 days. Great in wraps, salads, or reheated on its own.
