Description

This slow cooker corned beef and brussel sprouts recipe is a classic comfort meal that’s hearty, easy to prepare, and full of savory flavor.


Ingredients

  • Corned beef brisket with spice packet
  • Brussel sprouts, trimmed and halved
  • Yellow or white onion, sliced
  • Garlic cloves, crushed
  • Carrots (optional)
  • Beef broth or water
  • Bay leaf
  • Peppercorns
  • Optional: mustard seeds, coriander, whole grain mustard

Instructions

  • Layer onions and garlic on the bottom of the slow cooker.
  • Place corned beef on top, fat side up. Sprinkle with seasoning packet.
  • Pour broth around the beef, halfway up the sides.
  • Add carrots now if using. Cover and cook on LOW for 8–9 hours.
  • Add brussel sprouts during the final 2 hours.
  • Slice beef and serve with sprouts and broth.

Notes

  • Add potatoes or cabbage to vary the recipe.
  • Use water instead of broth for lower sodium.
  • Leftovers make great sandwiches with mustard and sprouts.
