This slow cooker corned beef and brussel sprouts recipe is a classic comfort meal that’s hearty, easy to prepare, and full of savory flavor.
Ingredients
- Corned beef brisket with spice packet
- Brussel sprouts, trimmed and halved
- Yellow or white onion, sliced
- Garlic cloves, crushed
- Carrots (optional)
- Beef broth or water
- Bay leaf
- Peppercorns
- Optional: mustard seeds, coriander, whole grain mustard
Instructions
- Layer onions and garlic on the bottom of the slow cooker.
- Place corned beef on top, fat side up. Sprinkle with seasoning packet.
- Pour broth around the beef, halfway up the sides.
- Add carrots now if using. Cover and cook on LOW for 8–9 hours.
- Add brussel sprouts during the final 2 hours.
- Slice beef and serve with sprouts and broth.
Notes
- Add potatoes or cabbage to vary the recipe.
- Use water instead of broth for lower sodium.
- Leftovers make great sandwiches with mustard and sprouts.
