Ingredients
- Chicken thighs or breasts
- Fresh lemon juice
- Ground turmeric
- Olive oil
- Minced garlic
- Salt
- Black pepper
- (Optional) Grated ginger
- (Optional) Fresh parsley for garnish
Instructions
- In a bowl, whisk together olive oil, lemon juice, turmeric, garlic, salt, and pepper.
- Add chicken and coat thoroughly in marinade.
- Cover and let marinate for at least 30 minutes (overnight is best).
- Preheat oven to 400°F (200°C).
- Place marinated chicken on a baking sheet or dish.
- Bake 25–40 minutes depending on cut, until golden and fully cooked.
- Let rest for 5 minutes before serving.
- Garnish with parsley and extra lemon if desired.
Notes
- Great served with rice, couscous, or naan.
- Can also be slow-cooked for 5–6 hours on low.
