Description

This stovetop ground beef chili is hearty, flavorful, and easy to make in under an hour. Packed with beans, spices, and a rich tomato base, it’s the perfect comfort food for chilly nights.


Ingredients

1 lb ground beef

1 large onion, diced

2 cloves garlic, minced

1 (15 oz) can diced tomatoes

1 (15 oz) can red kidney beans, drained and rinsed

1 (15 oz) can black beans, drained and rinsed

1 (6 oz) can tomato paste

2 tablespoons chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional)

Salt and pepper, to taste

2 cups beef broth

Olive oil, for sautéing


Instructions

1. Heat olive oil in a large pot over medium-high heat. Add diced onion and cook 3–4 minutes until softened.

2. Add minced garlic and cook 1–2 minutes until fragrant.

3. Add ground beef, breaking it up with a spoon. Cook 5–7 minutes until browned. Drain excess fat if needed.

4. Stir in chili powder, cumin, smoked paprika, and cayenne (if using). Cook 1–2 minutes to bloom the spices.

5. Stir in tomato paste and cook 2–3 minutes to deepen flavor.

6. Add diced tomatoes, beef broth, salt, and pepper. Stir well and bring to a simmer. Cook 20–25 minutes, stirring occasionally, until slightly thickened.

7. Add kidney beans and black beans. Simmer another 10–15 minutes until beans are heated through.

8. Taste and adjust seasoning with additional salt, pepper, or chili powder. Add more broth if too thick.

9. Serve hot with your favorite chili toppings.

Notes

Top with shredded cheese, sour cream, green onions, or tortilla chips.

For a spicier chili, increase cayenne pepper or add diced jalapeños.

This chili thickens as it cools—add broth to loosen leftovers.
