  • 2 lbs beef short ribs
  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread, toasted
  • 1 ½ cups shredded Gruyère or Swiss cheese

Instructions

1. In a Dutch oven, heat olive oil over medium-high heat. Sear the beef short ribs on all sides until browned. Remove and set aside.

2. In the same pot, melt the butter. Add sliced onions and cook, stirring often, for 25-30 minutes until deeply golden and caramelized.

3. Stir in minced garlic and cook for 1 additional minute until fragrant.

4. Return short ribs to the pot. Add beef broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Bring to a simmer.

5. Reduce heat to low, cover partially, and simmer for 2-3 hours until the short ribs are tender.

6. Remove short ribs, shred the meat, and discard bones. Return shredded meat to the soup.

7. Preheat broiler. Ladle soup into oven-safe bowls. Top each with a slice of toasted bread and shredded cheese.

8. Broil until the cheese is melted and bubbly. Serve hot, garnished with fresh thyme if desired.

Notes

For a deeper flavor, caramelize onions slowly over low heat.

This soup can be made a day ahead and reheated—flavors deepen over time.

Use oven-safe bowls for the final broiling step.

If preferred, substitute short ribs with chuck roast or stew meat.
