Description

Tender, juicy chicken thighs slow-cooked in a creamy garlic-Parmesan sauce with hints of sun-dried tomato and herbs—this Crockpot Marry Me Chicken might just win hearts with every bite.

Ingredients

Scale

6 bone-in, skin-on chicken thighs

Salt and pepper, to taste

2 teaspoons garlic powder

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon sun-dried tomato paste or finely chopped sun-dried tomatoes

2 tablespoons chopped fresh basil or parsley for garnish

Instructions

1. Season the chicken thighs all over with salt, pepper, garlic powder, thyme, oregano, smoked paprika, and red pepper flakes if using.

2. In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs skin-side down and sear until golden brown, about 4 minutes per side.

3. Transfer the seared chicken thighs to your crockpot.

4. In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.

5. Pour in the chicken broth and scrape up any browned bits from the skillet. Stir in the heavy cream, grated Parmesan cheese, and sun-dried tomato paste.

6. Heat the sauce mixture for a few minutes until warmed and slightly thickened.

7. Pour the sauce evenly over the chicken thighs in the crockpot.

8. Cover and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is tender and cooked through.

9. Garnish with chopped fresh basil or parsley before serving. Serve hot over pasta, rice, or with crusty bread.

Notes

Searing the chicken before slow cooking adds extra flavor but is optional if you’re short on time.

Make sure to scrape up all the bits from the skillet when deglazing—it enhances the flavor of the sauce.

Leftovers taste even better the next day and reheat beautifully.

For a lower-fat version, substitute half-and-half for the heavy cream.
