Description

Ingredients

2 pounds boneless, skinless chicken breasts

2 blocks (16 oz total) cream cheese, softened

1 packet dry ranch dressing mix (1 oz)

1/2 cup milk or chicken broth

1 cup shredded cheddar cheese

1/4 cup chopped green onions, optional

Salt, to taste

Black pepper, to taste


Instructions

1. Lightly spray the inside of your crockpot with nonstick cooking spray.

2. Place the chicken breasts in the bottom of the crockpot in a single layer.

3. In a mixing bowl, combine softened cream cheese and ranch dressing mix until smooth. Add a splash of milk if needed to loosen.

4. Spread the cream cheese mixture evenly over the chicken.

5. Pour the milk or chicken broth evenly over the chicken and cream cheese mixture.

6. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is tender and cooked through.

7. Shred the chicken directly in the crockpot using two forks or a hand mixer on low speed.

8. Stir in shredded cheddar cheese until melted and combined. Cover for 5–10 minutes to let everything get bubbly.

9. Sprinkle with chopped green onions before serving, if desired.

10. Serve hot on buns, over rice, or in tortillas for a comforting meal.

Notes

You can swap chicken breasts for thighs if you prefer a richer cut.

Milk makes the dish extra creamy, while broth gives it more savory depth.

For quick shredding, use a hand mixer on low directly in the crockpot.
