For the Chicken:

6 bone-in, skin-on chicken thighs

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 tablespoon olive oil (optional, for browning)

For the Gravy:

1 small onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream (or half-and-half for lighter option)

2 tablespoons all-purpose flour

1 tablespoon Dijon mustard (optional)

Fresh parsley, chopped (for garnish)


Instructions

1. Season the chicken thighs with salt, pepper, garlic powder, onion powder, and paprika on both sides.

2. (Optional) In a skillet, heat olive oil over medium-high heat and brown chicken thighs skin-side down for 4-5 minutes, then flip for 2 minutes. Set aside.

3. Place the chopped onion and minced garlic at the bottom of the crockpot.

4. Arrange the chicken thighs on top of the onion and garlic.

5. Pour the chicken broth evenly over the chicken.

6. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked through.

7. About 30 minutes before serving, remove the chicken from the crockpot and set aside.

8. In a small bowl, whisk together the flour and heavy cream until smooth.

9. Pour the mixture into the crockpot, stirring to combine. Add Dijon mustard if using.

10. Cover and cook on high for 20-30 minutes until the gravy thickens.

11. Return the chicken thighs to the crockpot, spoon some gravy over them, and cook for an additional 5 minutes to warm through.

12. Garnish with chopped fresh parsley before serving.

Notes

For extra richness, use heavy cream, but half-and-half works great for a lighter version.

This dish pairs beautifully with mashed potatoes, egg noodles, or rice.

You can also brown the chicken the night before to save time in the morning.
