For the Stroganoff:

2 pounds beef stew meat or chuck roast, cut into 1-inch cubes

1 medium onion, diced

3 garlic cloves, minced

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon Dijon mustard

1/2 cup sour cream

1 (10.5-ounce) can condensed cream of mushroom soup

8 ounces sliced mushrooms

1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

12 ounces egg noodles, cooked (for serving)

Optional Garnish:

Fresh parsley, chopped


Instructions

1. Place the beef stew meat, onions, and garlic in the crock pot.

2. In a bowl, mix beef broth, Worcestershire sauce, paprika, salt, pepper, Dijon mustard, and cream of mushroom soup. Pour this mixture over the beef and stir to combine.

3. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender and easily shredded.

4. Add the sliced mushrooms during the last 1–2 hours of cooking.

5. If the sauce is too thin, stir in the cornstarch slurry and cook on high for an additional 15 minutes to thicken.

6. Once the beef is cooked and tender, stir in the sour cream. Adjust seasoning as needed.

7. Serve the stroganoff over cooked egg noodles, rice, or mashed potatoes.

8. Garnish with fresh parsley before serving.

Notes

This recipe works well with beef stew meat or chuck roast, but you can also use sliced sirloin for a leaner option.

Add the mushrooms later in the cooking process to prevent them from becoming too soft.

For added richness, stir in a splash of heavy cream with the sour cream at the end.

Leftovers store well in the fridge for up to 3 days and reheat beautifully.
