This corned beef slow cooker Guinness recipe combines tender brisket, rich stout, and hearty vegetables in one comforting, flavor-packed dish
Ingredients

- 3–4 lb corned beef brisket (with spice packet)
- 1 bottle Guinness stout (11–12 oz)
- 4 carrots, peeled and chopped
- 1 onion, quartered
- 6 small potatoes, halved
- 1/2 head green cabbage, cut into wedges
- 3 cloves garlic, smashed
- 2 bay leaves
- 10 peppercorns
- 1 tablespoon Dijon mustard (optional)
Instructions
- Rinse the corned beef under cold water and place it in the slow cooker, fat side up.
- Pour the bottle of Guinness over the meat.
- Add garlic, bay leaves, peppercorns, and the spice packet from the brisket package.
- Layer the onions, carrots, and potatoes around the brisket.
- Cover and cook on LOW for 8–10 hours.
- Add cabbage wedges during the last 2 hours of cooking.
- Once done, remove brisket and let rest for 10–15 minutes before slicing against the grain.
- Serve hot with vegetables and a drizzle of cooking broth.
Notes
- Use Guinness Draught for best flavor, but any dark stout will work.
- Leftovers are excellent for sandwiches the next day.
- To reduce saltiness, rinse the brisket thoroughly before cooking.
