Description
A cozy and creamy broccoli cheddar soup made in the slow cooker, perfect for chilly days.
Ingredients

- 4 cups broccoli florets
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream or coconut cream
- 2 cups shredded sharp cheddar cheese
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
1. Add broccoli, onion, garlic, broth, paprika, salt, and pepper to crockpot.
2. Cook on low 6–7 hours or high 3–4 hours.
3. Blend to desired texture with immersion blender.
4. Stir in cream and cheese; cook on low 15–20 minutes.
5. Serve with extra cheese or croutons.
Notes
Shred cheese from a block for smoother melting; avoid overheating after adding cheese.
